CHINESE CASHEW CHICKEN 
2 whole chicken breasts, cut in 1" cubes
2 tbsp. oil
1/2 - 1 c. fresh mushrooms, sliced
1 c. celery, sliced
1 clove garlic, minced
8 oz. water chestnuts, sliced
1/2 c. green onions, sliced
1 c. tomato, chopped
1/2 c. cashews
4 c. lettuce, shredded

Combine: 1/8 tsp. pepper 1/4 c. water 1/4 c. soy sauce

Stir fry chicken, mushrooms, celery and garlic 3 minutes. Stir in cornstarch mixture. Cook and stir until thick and clear. Stir in tomatoes and cashews and cook 2 minutes. Serve over shredded lettuce. Serves 4-6.
