CARROT MUFFINS | |
2 1/4 c. flour 3/4 c. brown sugar 2 tsp. baking powder 2 beaten eggs 1/3 c. plus 2 tsp. vegetable oil 2 tbsp. thawed concentrated orange juice 1 1/2 c. shredded carrots 1/2 c. raisins 1 tsp. baking soda 1 tsp. cinnamon 1 tsp. nutmeg 1/2 tsp. salt 1/2 tsp. ground ginger Mix dry ingredients except carrots and raisins. Mix eggs, oil and orange juice. Then add to dry mixture. Fold in carrots and raisins. Bake at 350 degrees for 25 to 30 minutes. |
