TURKEY LASAGNA 
1 1/4 lbs. lean ground turkey
6 wide lasagna noodles, cooked, drained
1/2 c. chopped onion
4 c. prepared spaghetti sauce
1 c. Ricotta or cottage cheese
4 to 8 oz. sliced or shredded Mozzarella cheese
2 tbsp. grated Parmesan cheese

Heat oven to 350 degrees F. Spray bottom of large skillet with non-stick vegetable spray. Crumble ground turkey into pan, add onion. Cook and stir over medium high heat 5-7 minutes or until turkey is lightly browned. Stir in spaghetti sauce. Cook over low heat 15 minutes. Reserve 1 cup of meat sauce.

In bottom of 13x9 inch baking pan, arrange 3 noodles. Top with 2 cups meat sauce, 1/2 cup Ricotta or cottage cheese and 1/2 of the Mozzarella cheese. Repeat layers, topping with reserved 1 cup meat sauce. Sprinkle with Parmesan cheese.

Bake at 350 degrees F. for 30-40 minutes or until bubbly. Let stand 10 minutes before serving. Serves 6.
