TERRIFIC TURKEY LASAGNA 
1 (about 1 1/4 lb.) pkg. premium fresh lean ground turkey
6 wide lasagna noodles, cooked, drained
1/2 c. chopped onion
4 c. or 1 lg. jar prepared spaghetti sauce
1 c. ricotta or cottage cheese
4 to 8 oz. sliced Mozzarella cheese
2 tbsp. grated Parmesan cheese

Heat oven to 350 degrees. Spray bottom of large skillet with non-stick vegetable spray or grease lightly. Crumble ground turkey into pan; add onion. Cook and stir over medium high heat 5 to 7 minutes or until turkey is lightly browned. Stir in spaghetti sauce. Cook over low heat 15 minutes. Reserve 1 cup meat sauce. (Can freeze in airtight container; thaw in microwave and use when needed.)

In bottom of 9x13 inch baking dish, arrange 3 noodles. Top with 2 cups meat sauce, 1/2 cup ricotta cheese and half of the Mozzarella cheese. Repeat layers, topping with reserved 1 cup meat sauce. Sprinkle with Parmesan cheese. Bake at 350 degrees for 30 to 40 minutes or until bubbly. Let stand 10 minutes before serving. 8 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
