SWEET POTATO BALLS 
3 c. cooked yams
1/4 c. butter
2 tbsp. milk
3/4 c. brown sugar
1/4 tsp. salt
1/2 tsp. grated lemon rind
8 marshmallows
1/2 c. crushed corn flakes

Mash potatoes. Add butter, sugar, milk, salt and lemon rind. With tablespoon scoop up about 1/2 cup mixture. Center with marshmallow and cover with more potatoes. Shape into balls and roll in corn flake crumbs. Place in buttered baking dish. Cover with aluminum foil and freeze. When ready to serve, bake until marshmallows ooze out, about 20 minutes. Makes 8 balls.
