CHINESE BLINTZES 
Beat until smooth:

1 lb. softened cream cheese
1/2 c. sugar
2 egg yolks

Remove the crust from 2 (1 pound) loaves of FRESH bread. Flatten each slice with a rolling pin until thin. Spread each slice with above filling. Roll each piece into a log, and secure seam. Dip into or brush with melted butter. Roll in mixture of 1 cup sugar and 4 teaspoons cinnamon.

Bake at 400 degrees for 12-15 minutes until puffy - or freeze until ready to use. Do not thaw.
