CANADIAN CHEESE SOUP 
1/2 c. celery, chopped
1/2 c. carrots, chopped
1/2 c. onion, chopped
1/4 c. butter
1/4 c. flour
2 tbsp. cornstarch
3 c. chicken broth
1 qt. milk
1/8 tsp. baking soda
2/3 of a 2 lb. loaf of Velveeta, cubed

Saute celery, carrots and onion in 1/4 cup butter. Add flour and cornstarch, stir well. Add chicken broth slowly, stirring constantly. Add milk in which you have dissolved baking soda. Then add Velveeta and stir until melted. Makes 2 1/2 to 3 quarts.
