ZUCCHINI-CHEESE PIE 
1/2 c. Cheddar cheese
3 c. zucchini, shredded
1 c. Bisquick
1/2 c. corn or vegetable oil
1 tbsp. parsley, chopped
4 med. eggs, slightly beaten
Salt and pepper to taste
Slices of pepperoni, optional

Mix cheese, zucchini, Bisquick, oil and parsley together. Combine eggs with other ingredients; add salt and pepper. Stir in pepperoni and spread into a greased pie plate (large). Bake at 375 degrees for about 40 minutes or until golden brown.
