BROCCOLI AND CHEESE QUICHE 
1/2 head broccoli (cut into flowerets)
1 carrot, sliced
1 onion, sliced
5 eggs
1 (15 oz.) low fat Ricotta cheese
1/2 tsp. salt
1/2 tsp. dried basil
1/4 tsp. pepper
1 c. shredded Mozzarella cheese

Preheat oven to 350 degrees. Spray 9 inch pie plate with cooking spray.

In saucepan bring 1 inch water to boil. Add broccoli, carrot and onion. Simmer, covered, until crisp tender. Drain.

In bowl beat eggs, add cheese, salt, basil and pepper. Stir in cheese and 3/4 of vegetables. Pour into pie plate. Top with remaining vegetables. Bake 1 hour.
