BAKED BEANS | |
1 lb. dry navy beans, great northern or marrow 1 tsp. baking soda Water 1 qt. canned tomatoes 1 lg. onion, diced 1 tsp. dry mustard 2 or 3 celery leaves 4 smoked ham hocks, a ham bone or 1 lb. smoked bacon ends, diced 1 c. brown sugar Salt and pepper to taste In a large kettle cover beans with at least 1 inch of water; bring to a boil. Add soda, watching carefully as the soda will foam up. Boil for 12 minutes. Remove from the fire and drain. Rinse under cold running water. Place in roasting pan and add remaining ingredients, stirring well. Add water to cover well. Cover and bake in slow, 325 degree F. oven for 2 hours. Add water if necessary to keep covered, while baking. Add 1 cup packed brown sugar and continue baking for 1 hour or until beans are tender and pork is done. |
