BAKED AGAIN POTATOES 
3 lb. cooked whipped potatoes (or instant)
1 stick butter
6 oz. cream cheese
1 bunch scallions, sliced (part of tops)
1 (2 oz.) jar chopped pimentos
1/2 c. grated cheddar cheese
1/2 c. grated Parmesan cheese
Salt & pepper to taste

Combine all ingredients. The mixture should be fairly moist. If not, add some sour cream. Place in 2 quart baking dish. Bake at 350 degrees for 30 minutes.
