2 c. butter 2/3 c. powdered sugar 2 c. plain flour 1 1/3 c. cornstarch 1 lemon rind, grated TOPPING: 3/4 stick butter 2 tbsp. lemon juice Cream butter; add sugar and other ingredients. Chill. Roll into marble size balls. Dent in center with thumb. Bake 15 minutes at 325 degrees. While warm, fill in dent on top with the topping (cream well until smooth). May be frozen. Yield: 8 dozen cookies. |
