MARTHA'S FRESH APPLE CAKE 
1 1/2 c. oil
2 c. sugar
3 eggs
1 tsp. salt
1 tsp. baking soda
2 tsp. vanilla extract
3-4 tsp. cinnamon
1/2-1 tsp. ginger
3 c. all-purpose flour
3 c. diced sm. apples
1-1 1/2 c. walnuts
1 c. raisins

GLAZE:

1/2 c. buttermilk
1 stick butter
1 c. sugar
1 tsp. baking soda
1/2-1 tsp. vanilla extract

Cream oil and sugar together. Beat eggs in one at a time. Add soda, salt, vanilla, cinnamon and cream together. Add 2 cups of flour and cream together. Take remaining flour (1 cup) use 1/2 cup to roll apples in and add to above. Use 1/2 cup to roll raisins and walnuts in and add to above.

Bake in tube pan (greased and floured) at 325 degrees for 1 hour and 45 minutes. When taken out of oven, pour glaze over and let cool.

Glaze: Place all ingredients except baking soda in heavy saucepan. When starts to bubble add baking soda, stir and dump immediately over hot cake and let cool in pan 1 1/2-2 hours.
