2 tsp. vanilla
2 c. sugar
2 eggs
1/2 c. oil (Crisco)
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
1/2 tsp. salt
1 c. raisins
Nuts (opt.)
3 c. finely chopped apples

Grease and flour tube pan. Preheat oven to 350 degrees. Mix egg, vanilla, sugar and oil mixture. Combine dry ingredients. Fold into egg mixture. Add apples, raisins and nuts. Spoon into pan and bake for 60 minutes. Use knife to loosen as it cools.
