SALTED PEANUT COOKIES 
1 c. shortening
2 c. firmly packed brown sugar
2 eggs
2 c. all purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 c. quick cooking oats, uncooked
1 c. crispy rice cereal
1 c. salted peanuts

Cream shortening; gradually add brown sugar, beating well at medium speed of an electric mixer. Add eggs, and beat well. Combine flour, baking powder, soda, and salt; add to creamed mixture, mixing well. Stir in oats, cereal, and peanuts. (Dough will be stiff.)

Drop dough by rounded teaspoons onto lightly greased cookie sheets. Bake at 375 degrees for 10-12 minutes. Remove cookies to wire racks to cool.
