GREEN APPLE CAKE 
3 c. chopped green apples, unpeeled
2 1/2 c. sifted flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 eggs
2 c. sugar
1 c. safflower oil
1 tsp. vanilla
1 c. chopped pecans

Prepare apples; set aside. Sift dry ingredients together. In large bowl, beat eggs well and add sugar, oil, and vanilla; mix well. Add dry ingredients, stirring until well blended. Fold in nuts. (Batter will be lumpy and very thick). Place in greased and floured 9 x 13 inch pan or 9 x 3 x 1/2 inch tube pan. Bake at 350 degrees for 50 to 60 minutes. Serve plain, with whipped cream or vanilla ice cream.
