SUGAR-FREE STRAWBERRY SPREAD 
1 env. unflavored gelatin
1/4 c. white grape juice
3 c. chopped fresh strawberries
2 tbsp. frozen unsweetened cranberry juice concentrate, thawed
2 tbsp. water
1 tbsp. fresh lemon juice

In a small cup, soften gelatin in grape juice. In medium saucepan, combine remaining ingredients. Bring to a boil and simmer, uncovered 8 minutes, stirring occasionally. Remove from heat and stir in gelatin mixture until dissolved. Cool to room temperature. Store in air tight container in refrigerator. Yield: about 2 cups.
