FISH FILLET BURGER 
Fish Fillet Sandwich:

2 tilapia fillets, cut in half to become bun sized
1/2 cup all-purpose flour
1/2 cup bread crumbs
1 tsp. salt
1/2 tsp. pepper
1 tsp. garlic powder
2 eggs, beaten
non-stick cooking spray
4 hamburger buns
4 slices American cheese (or your favorite)
shredded lettuce
cucumber

Preheat the oven and baking sheet to 350°F for 30 minutes

Mix the flour, breadcrumbs, salt, pepper and garlic powder in a shallow dish (like a pie plate).

Beat the eggs in a bowl. Dip the tilapia in the egg and allow extra to drip off.

Place it in the flour mixture and coat it completely, shaking off the area. Place on a plate.

Repeat with the remaining fish.

Spray the tops of the fish with the cooking spray. Place on the baking sheet cooking spray side down. Spray the other side of the fish with the cooking spray as well.

Cook for 15 minutes and then flip and cook an additional 15 minutes or until the fish is completely cooked and golden brown.

Toast the buns and melt a slice of cheese on each bottom bun to melt.

Place a piece of tilapia on top of the cheese and then top with a spoonful of the tartar sauce.

Top with lettuce, cucumber, tartar sauce, the fish fillet and the buns then enjoy!

Serves 4.

Homemade Tartar Sauce:

1/2 cup mayonnaise
1/2 cup Greek yogurt (non fat)
1 tbsp. white vinegar
1/2 cup bread and butter relish
2 tbsp. bread and butter relish liquid
salt and pepper, to taste

Mix all of the ingredients in a bowl and set aside in the fridge.
