FARMER'S BREAKFAST | |
1/4 c. butter 2 c. cubed uncooked potatoes 1/4 c. finely chopped onion 1 c. cubed ham 1/4 c. chopped parsley 6 eggs 3/4 tsp. salt Dash pepper 2 tbsp. half and half 1/2 c. shredded Jack cheese Melt butter in large frying pan. Add potatoes and onions. Cover and cook over medium heat, stirring occasionally to brown evenly, about 20 minutes. Add ham and cook a few minutes longer until lightly browned. Sprinkle mixture with parsley. Reduce heat. Beat together eggs, salt, pepper and half and half until well blended. Pour egg mixture over potatoes and ham. Cover and cook until eggs are almost set, slipping spatula around edge of pan occasionally, allowing egg mixture to run down, about 10 minutes. Sprinkle with cheese and cover again until cheese melts. Cut in wedges to serve. 4-6 servings. |
