1 (10 oz.) pkg. frozen chopped spinach, thawed, squeeze dry
1 lb. Velveeta with jalapenos
1/2 c. milk
1 sm. onion, diced
1 (2 oz.) jar diced pimento
1 med. tomato, diced

Combine all ingredients except tomato and spinach over low heat until cheese melts. Stir in spinach and tomatoes. Serve warm with chips.
