FISH BATTER 
2 lbs. fish
1 c. flour
2 tsp. baking powder
2 tsp. salt
1 egg, separate
1/2 c. lukewarm water
1 tbsp. cooking oil

Beat together flour, baking powder, salt, egg yolks, water, and oil until mixed well. Fold in beaten egg whites. Dry fish of excess moisture. Dip in batter. Deep fry in 365 degrees for 4 to 6 minutes.

Note: "I used perch. Drain on paper. This batter is good on other things. Just a real good batter."
