SWEET POTATO SOUFFLE 
3 c. cooked sweet potatoes
1 c. sugar
2 eggs
1/2 c. milk
1/2 tsp. vanilla
1/2 tsp. nutmeg
1/4 c. mini marshmallows

TOPPING:

1 c. brown sugar
1/2 c. flour
1 c. chopped pecans
1/2 stick butter, melted

Mash potatoes and add marshmallows while hot. Add remaining ingredients and mix well. Pour into buttered 9"x13" pan and top with topping.

TOPPING: Mix flour and brown sugar. Add melted butter and mix well. Add nuts. Bake at 400 degrees for 30 minutes or until topping is brown.
