SHRIMP CHICKEN CRAB GUMBO 
2 lb. shrimp, shelled
6 oz. crab meat
1 lb. chicken
1/2 c. oil
1/2 c. flour
3 c. okra
3 chopped onions
2 cans tomatoes
Tabasco sauce to taste
1/2 tsp. thyme
3 qt. water
1-2 bay leaves
1 tsp. salt
3 cloves garlic
1 tsp. crab boil or seafood seasoning
1/2 c. celery
2 tbsp. oil
1/4 c. Worcestershire sauce
1 green bell pepper

In a heavy pot add flour slowly with oil until medium brown. Add celery, onions, green pepper, and garlic; cook until tender. To this add tomatoes. When heated through add to gumbo pot. Saute chicken and add to gumbo. Then fry okra and add to gumbo. Add Worcestershire sauce, Tabasco sauce, bay leaves, thyme, salt, and pepper. Simmer 2 hours. Gradually add shrimp and crab and continue simmering 1 hour. Remove from heat. Serve over hot cooked rice.

You would be better off to use unpeeled shrimp from your local fishhouse/seafood market. If you peel shrimp, they will lose flavor and size.
