RAW APPLE NUT CAKE 
3 eggs
2 c. sugar
1 1/4 c. oil
3 c. diced apples
3 c. flour
1 c. chopped nuts
1 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cinnamon

Beat eggs; add sugar and beat. Add oil and 1/2 the apples and 1/2 the flour and beat. Add vanilla, soda, salt and cinnamon; beat. Add remaining apples and flour and nuts. Beat well and put into greased tube pan. Bake at 325 degrees for 1 hour and 15 minutes or until done.
