ZUCCHINI APPLE CRISP 
6 c. coarsely chopped zucchini
2 1/2 c. coarsely chopped apples
3/4 c. sugar
6 tbsp. lemon juice
3 tbsp. quick-cooking tapioca
1/2 tsp. cinnamon
1 1/2 c. flour
2/3 c. brown sugar, packed
1/2 c. quick-cooking oatmeal
1/8 tsp. nutmeg
1/2 c. butter

Put zucchini and apples in bottom of a 2-quart microwave dish. Mix sugar, lemon juice, tapioca and cinnamon and pour on top of zucchini and apples. Mix flour, brown sugar, oatmeal, and nutmeg. Cut in butter until you have a crumbly mixture. Sprinkle over mixture that is in microwave dish. Bake in microwave uncovered on high for 10-12 minutes or until mixture begins to bubble. Allow to stand 5 minutes before serving. Serves 8-10 people.

Since microwave ovens vary in power, you may need to adjust your cooking time.
