ZUCCHINI "APPLE" PIE 
4 c. seeded & sliced zucchini
1/4 c. water
3 tbsp. butter
4 tbsp. vinegar
1 c. sugar
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1 tbsp. lemon juice
1/2 c. brown sugar
2 tbsp. flour
Unbaked pie shell

CRUMB TOPPING:

1/2 c. butter
1 c. flour
1/2 c. brown sugar

In a large saucepan combine zucchini, water, butter, vinegar, sugar, nutmeg, cinnamon, lemon juice, brown sugar and flour. Cook on low heat until thickened. Pour into unbaked 9 inch pie shell.

Combine butter, brown sugar and flour. Put on top of pie and bake in 450 degree oven for 15 minutes, then lower temperature to 350 degrees for 45 minutes.
