ZUCCHINI APPLE PIE 
4 c. sliced cooked zucchini
1 c. sugar
2 tbsp. flour
1 1/2 tsp. cinnamon
1 1/2 tsp. cream of tartar
2 tbsp. lemon juice
Dash salt
Dash of nutmeg
1 (2 crust) pastry

Peel and remove seed core and cut zucchini to resemble sliced apples. Cook until tender. Drain and place in cold water for 5 minutes. Drain thoroughly. Add rest of ingredients to slices. Pour into pie shell.

Dot with butter and cover with top of crust. Bake at 400 degrees for 40-50 minutes. Can be frozen unbaked.
