DOUBLE CHOCOLATE MINT CHIP
COOKIES
 
1 (10 oz.) pkg. mint flavored semi-sweet chocolate chips, divided
1 1/4 c. all-purpose flour
3/4 tsp. baking soda
1/2 tsp. salt
1/2 c. butter, softened
1/2 c. firmly packed brown sugar
1/4 c. sugar
1/2 tsp. vanilla extract
1 egg
1/2 c. chopped nuts

Preheat oven to 375 F. Melt over hot (not boiling) water, 3/4 cup mint chocolate chips; stir until smooth. Cool to room temperature.

In bowl, beat butter, brown sugar, sugar and vanilla and egg; beat well. Gradually blend in flour mixture. Stir in remaining chips and nuts.

Drop by rounded measuring tablespoonfuls onto ungreased cookie sheets. Bake at 375 F. for 8-9 minutes. Allow to stand 2-3 minutes before removing from cookie sheets. Makes about 1 1/2 dozen cookies.
