GRANDMA SYLVIA'S PUMPKIN CAKE 
3 c. flour
3 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
4 well beaten eggs
2 c. mashed pumpkin (1 lb. can)
2 c. sugar
1 1/2 c. oil
1 tsp. vanilla
1/2 c. chopped walnuts

Combine sugar and oil. Add beaten egg and mix well. Add pumpkin. Add vanilla, then dry ingredients sifted together. Add nuts. Bake in greased tube or bundt pan at 350 degrees - 12 cup bundt for 1 hour 15 minutes or 2 (6 cup) bundt for about 50 minutes. Check with cake tester. Cool in pan about 10 minutes.
