PISTACHIO PECAN PARTY COOKIES 
1/2 c. powdered sugar
1/2 c. butter, softened
1/2 c. oil
1 tsp. almond extract
1-3 drops green food coloring
2 eggs
2 c. flour
1/2 tsp. baking soda
1/2 tsp. cream of tartar
1/8 tsp. salt
1/2 c. chopped pecans
1 (3 3/4 oz.) pkg. instant pistachio pudding

In a large bowl combine powdered sugar, butter, oil, almond extract, food coloring, eggs and pudding; mixing well. Mix flour, soda, salt and cream of tartar together. Gradually add dry ingredients to other mixture mixing well after each addition, stir in nuts. Chill dough for easier handling.

Shape dough into balls (about a teaspoonful) and roll in sugar. Place 2 inches apart and bake at 375 degrees for 10-15 minutes or until light golden brown around edges. Makes 4 1/2 dozen.
