APRICOT NUT BREAD 
1 1/2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1/2 c. sugar
1 c. quick rolled oats
1 c. dried apricots, chopped
1/2 c. nutmeats, chopped
2 eggs, beaten
1/3 c. liquid shortening
1 1/4 c. milk

Heat oven to 350 degrees (moderate). Sift together flour, baking powder, soda, salt and sugar into a bowl. Stir in oats, apricots and nut meats. Add beaten eggs, shortening and milk, stir only until dry ingredients are moistened. Pour into greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan. I use two small ones or four small ones when double the recipe. Bake in preheated oven about one hour. Cool several minutes, turn out of pan. (For ease of slicing, wrap and store one day.
