APRICOT NUT BREAD | |
1 3/4 c. all-purpose flour 2 tsp. baking powder 1/2 tsp. salt 1/2 c. soft butter 2 eggs 1 c. mashed bananas 1/4 c. milk 3/4 c. chopped dried apricots 1/2 c. coarsely chopped pecans Combine first 5 ingredients. Set aside. Cream butter, gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine bananas and milk. Add to creamed mixture alternately with dry ingredients. Fold in apricots and pecans. Pour batter into a greased and floured loaf pan. Bake at 350 degrees for 1 hour or until bread tests done. |
