APRICOT-BANANA BREAD 
1 3/4 c. unbleached flour
1 tbsp. baking powder
1 tsp. cinnamon
1/3 c. butter
1/2 c. sugar
2 eggs
1 1/2 c. banana - sprinkle with 2 tsp. lemon juice
1 c. chopped dried apricots
1 c. walnuts or pecans

Preheat oven to 350 degrees. Sift flour, baking powder and cinnamon. Set aside.

Mix bananas, apricot and walnuts; set aside. Cream butter and sugar. Add eggs, mix. Add flour mixture alternating with banana mix. After thoroughly mixed, pour batter into floured pan (8 1/2 x 4 1/2 x 3 loaf pan). Bake 1 hour or until done.
