OLD SOUTH BEAN SOUP 
1 (1 lb.) navy beans
Water
Ham hock, smoked and meaty
1 med. potatoes, cubed
Salt and pepper
1 chopped onion
1 c. chopped celery
2 cloves garlic, minced

Wash beans and soak overnight in water to cover. Add enough water to make 5 quarts. Add ham hock and simmer for about 2 hours or until beans reach mushy stage. Add potatoes, onion, celery, and garlic; simmer for 1 hour. Remove ham hock, add meat to soup. Season to taste.
