AU GRATIN POTATOES 
8 c. cooked diced potatoes
1 1/3 c. grated cheese (I prefer natural med. or sharp Cheddar)
1/4 c. butter
1/4 c. flour
2 c. milk
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. cracker crumbs

Melt butter. Blend in flour until smooth. Add milk gradually and stir until smooth and thickened. Add seasonings. Place half the potatoes in buttered baking dish or casserole. Cover with half the cheese. Pour half the sauce over the cheese. Repeat. Top with crumbs. Bake at 450 degrees for 20-30 minutes, uncovered. OR For extra moisture cover. OR Cover for half the baking time.
