SAVORY ITALIAN RICE BAKE 
3/4 lb. Italian sausage
1 pkg. Rice-A-Roni (chicken flavor)
1/2 c. chopped onion
2 sm. zucchini, cut into 1/4 inch slices
1 clove garlic
2 c. spaghetti sauce
1/2 tsp. basil
1 1/2 c. shredded Mozzarella cheese

Heat oven to 350. Prepare Rice-A-Roni mix as package directs. Remove sausage from casing, crumble. In 10 inch skillet brown sausage and onion, drain, reserving 1 tablespoon drippings from pan. Set aside. Add zucchini and garlic, saute over medium heat 1 minute. Cover and continue to cook over low heat about 2 minutes or until crisp and tender.

Combine prepared rice mix, sausage mixture, 1 cup spaghetti sauce and basil. Put into 13x9 inch baking dish. Sprinkle with 1/2 cup cheese. Top with zucchini, add remaining sauce and sprinkle with remaining cheese. Bake for 25 to 30 minutes or until heated through. Let stand 5 minutes before serving.
