“BLACK BEAN SOUP” IS IN:

BLACK BEAN SOUP 
1 lb black beans, soaked
8 cups low sodium broth or water
1 tablespoon kosher salt
1 cup onion, chopped
1 cup green pepper, chopped
1 cup celery, chopped
1 cup carrots, chopped
8 tablespoons olive oil
6 garlic cloves, peeled
1 1/2 teaspoons cumin (or to taste)
4 teaspoons white vinegar

Simmer beans in water until soft. Sauté onion, pepper, celery and carrots in olive oil until the onions turn golden brown. Add garlic, cumin and vinegar. Cook, stirring for 3 minutes. Drain about 1/2 cup water from beans and add it to the sauté.

Cook over low heat for 30 minutes.

Combine vegetables with beans.

Cook for another 30 minutes, adding more water if necessary.

The recipe from El Salvador calls only for beans water, onion cut in half, and a head of garlic with the small end cut off. No salt. Bring to a boil then simmer 2 or 3 hours before adding any salt. The cooking time will be less. The more water you add, the more soup you will make. Recipe compliments of Sandra Carranza.

Great flavor, made many black bean soups and this is by far the best!!! I had a few plum tomatoes so I chopped and added them also. I pureed half of the soup. Topped with sour cream! This is a keeper!!!

This soup was very easy to make. I had all the ingredients on hand. The cumin gave the beans a very nice flavor and the aroma was insane. I will definitely add this recipe to my binder. I will make this again!

Pureed 2-3 cups of the soup and then added some lime juice and a can of creamed corn. YUM

This was a delicious soup. I would not recommend using dried beans. I soaked overnight and then cooked for 3 1/2 hours. I still could have cooked them more but couldn't wait. I used Trader Joe's organic chicken broth as I had to keep adding liquid.
