SALMON CROQUETTES 
1 can salmon
Juice of 1 lemon
1 egg, beaten
1 med. onion, chopped
1/4 tsp. salt
1/4 tsp. pepper
1/2 c. cornmeal

Drain salmon. Remove bone and skin. Mix by hand with other ingredients. Roll croquettes in shape about 2 inches long. Fry in deep fat. Drain on paper towel.
