SHRIMP SCAMPI 
1 lb. med.-lg. fresh shrimp
3 tbsp. butter
2 cloves garlic
1/4 c. chopped parsley
1/4 c. white wine
Juice of 1 lemon
Salt & pepper to taste

Peel and devein shrimp. Peel and crush garlic. Melt butter in saute pan. Add garlic, allow to cook in butter 10 to 15 minutes on low, do NOT brown. Remove garlic from pan, add shrimp. Saute shrimp until firm and pink. Add lemon juice, parsley, wine and seasoning. Serves 4 to 6 generous servings.
