PUMPKIN PINEAPPLE DELIGHT 
2 c. sugar
1 c. oil
2 c. pumpkin
2 c. flour
2 tsp. baking soda
1 1/2 tsp. baking powder
2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1 c. crushed pineapple, drained
1/2 c. coconut (opt.)
1/2 c. chopped nuts (opt.)

Combine sugar, oil and pumpkin; beat well. Sift together flour, soda, baking power, salt, cinnamon and nutmeg. Slowly add to pumpkin mixture. Add remaining ingredients. Grease and flour 9"x13" pan; pour batter in and bake at 350 degrees for 45 minutes. Cool before frosting.

FROSTING:

1 cube butter
6 oz. cream cheese
1 tsp. vanilla
1 box powdered sugar

Beat butter and cream cheese until well blended. Add vanilla, continue beating and slowly add powdered sugar; mix until smooth. Spread on cake.
