POTATO SOUP 
3 med. brown potatoes
2 carrots
1 med. onion
1/2 bunch green onions (shallots)
1 can chicken broth
1 can cream of mushroom soup
1/2 pt. half & half or milk
2 bay leaves
1 tsp. parsley
1 toe garlic
1/2 block butter
Salt & pepper

Boil potatoes and carrots in small amount of water for 20 minutes. Saute onion and green onions in tablespoon butter 5 minutes. Add mushroom soup, chicken broth and half and half. Bring to boil. Add to mashed potatoes and carrots.

Add bay leaves and mashed garlic and simmer 20 minutes. Add parsley, salt and pepper and rest of butter. Remove bay leaves before serving. Serves 6.
