FETTUCCINE VEGGIE TOSS | |
12 oz. pkg. fettuccine noodles 3 tbsp. butter 3 tbsp. vegetable oil 1 sm. bunch broccoli (cut into 2 inch pieces, about 4 c.) 1 lg. onion, sliced (1 c.) 4 oz. fresh pea pods (6 oz. frozen) 1 c. quartered mushrooms 1 lg. yellow pepper (cut in 1/2 inch strips) 1 lg. red pepper (cut in strips) 1 lg. green pepper (cut in strips) 1 clove garlic, minced 1/2 tsp. salt, pepper 1 1/4 c. heavy cream 1/3 c. grated Parmesan cheese (fresh) Cook fettuccine. In large skillet, medium heat, melt butter and oil; add broccoli and onion. Cook 3 minutes. Add pea pods, mushrooms, peppers, garlic, salt and pepper. Cook 4-5 minutes. Add cream and Parmesan cheese. Cook 3 minutes longer. Stir frequently. Add fettuccine. Stir and serve. 6-8 servings. |
