MICROWAVE HAM-AND-PEPPERS
FETTUCCINE
 
2 tbsp. butter
1 lg. onion, cut in 1/4 inch wedges
1 med. red pepper, cut in 2 x 1/4 inch strips
1 med. yellow pepper, cut in 2 x 1/4 inch strips
2 med. cloves garlic, crushed
1/2 tsp. dried rosemary leaves
3 tbsp. all-purpose flour
2 c. half and half
1/4 lb. boiled ham, cut in 2 x 1/4 inch strips
1/2 pkg. (9 oz. size) frozen peas, thawed
1/2 c. grated Parmesan cheese
1 pkg. (12 oz.) fettuccine, cooked

1. In large glass bowl, combine butter with onion, pepper strips, garlic and rosemary. Cover with plastic wrap, turn back one corner to vent. Cook on High 5 minutes, stirring once.

2. Stir in flour until blended. Gradually add half and half, stirring until smooth. Add ham, peas, Parmesan and 1/8 tsp. pepper; mix well. Cook uncovered on High 8 minutes, stirring occasionally, until boiling and slightly thickened.

3. Add fettuccine, toss to coat with sauce. Cook on Medium 2 minutes, or until heated through. If desired, garnish with rosemary sprig. Serves 4-6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
