FANCY EGGS, SCRAMBLED 
CHEESE SAUCE:

2 tbsp. butter, melted
2 tbsp. all-purpose flour
1/2 tsp. salt
1/8 tsp. pepper
2 c. milk
1 c. (4 oz.) shredded process American cheese

EGGS:

1 c. (4 oz.) diced Canadian bacon
1/4 c. chopped green onion, with tops
7 tbsp. butter, melted
12 eggs, beaten
1 (3 oz.) can mushrooms stems and pieces, drained
2 1/4 c. soft bread crumbs (3 slices)
1/8 tsp. paprika

CHEESE SAUCE: Melt butter, blend in flour, salt and pepper. Add milk and cook, stirring until bubbly. Stir in cheese until it is melted.

EGGS: In large skillet, cook bacon and onion in 3 tablespoons butter until onion is tender, not brown. Add eggs and scramble until just set. Fold mushrooms and cooked eggs into cheese sauce.

Turn into a 9x13 inch pan or glass dish. Combine remaining 4 tablespoons of melted butter, bread crumbs, and paprika and sprinkle on eggs. Cover and chill until 30 minutes before serving. Bake, uncovered, at 350 degrees for 30 minutes. Serves 10.
