DELICIOUS CHEESY POTATO SOUP RECIPE | |
Water 10 medium red potatoes 1/2 package chopped bacon pieces 1 diced green bell pepper 1 large finely chopped onion 2 minced garlic cloves 1 teaspoon celery seed 1/4 teaspoon salt 1/4 teaspoon pepper 1/3 package cubed Velveeta cheese 1 cup milk Rinse, drain and then peel, slice chop and cut meat and vegetables into smaller bite sized pieces for easier handling and cooking. Set aside separately until needed. Add enough water to cover the potatoes and diced red potatoes in a large pot. Add a pinch or two of salt. Bring to boil. Cover and cook until potatoes are tender. In a large pot or a separate skillet over medium heat, add bacon bits, diced green pepper, chopped onion and garlic. Stir constantly while cooking until onions are translucent. Sauté until the green pepper and a piece of bacon are tender. Drain off bacon drippings with the exception of about 1 teaspoon. Stir in the celery seed, salt and pepper. Sauté for 1 to 2 minutes. Add this mixture to the pot of boiling potatoes and stir. Reduce heat to medium. Add the cubed Velveeta cheese and stir to help melt the cheese. Slowly add the milk, stirring continually, while heating the soup through until hot. Potato soup is only as good as making a beef stew recipe when you want something good to eat. Enjoy!
