FRENCH OVEN BEEF STEW | |
2 lbs. stew beef, 1 1/2 inch cubes 2 med. onions, cut in 8 pieces 3 stalks celery, lg. pieces 4 carrots, quartered 1 c. tomato juice 1/3 c. quick tapioca 1 tsp. salt 1/2 tsp. basil 1 tbsp. sugar 1/4 tsp. pepper 2 med. potatoes, cut Combine beef, onion, celery and carrots in a roaster or large casserole. Combine tomato juice, tapioca, sugar, salt, pepper and basil; pour over meat and vegetables. Cover and bake at 300 degrees for 3 hours. Add potatoes and cook one more hour. Stir occasionally. I often need to add additional juice. |
