SWEET POTATO CASSEROLE 
3 medium sweet potatoes (uncooked), shredded
4 eggs
1 c. raisins
1/4 tsp. vanilla
1/4 c. orange juice
1 c. chopped pecans (optional)
1/2 c. brown sugar
2 c. water

Mix all ingredients. Pour into a 1 1/2-quart greased casserole. Cover and bake at 350°F for 1 hour. Remove cover and continue baking 15 minutes longer.
