KAHLUA GLAZED CARROTS | |
3 c. diagonally sliced carrots 1 tbsp. butter 1 tbsp. brown sugar 1 tbsp. honey 3 tbsp. Kahlua or other coffee flavored liqueur 1 tsp. cornstarch 1/4 tsp. salt 3 slices bacon, cooked & crumbled 1 tbsp. chopped fresh parsley Place carrots in a vegetable steamer over a small amount of boiling water. Cover and steam 4 to 5 minutes or just until tender. Remove from heat. Melt butter in a large skillet over medium heat. Stir in brown sugar, honey and 2 tablespoons Kahlua; cook over medium heat until bubbly. Combine remaining 1 tablespoon kahlua and cornstarch; stir well, and add to brown sugar mixture. Stir in salt. Continue cooking until thickened and bubbly. Add carrots, tossing gently to coat. Cook just until carrots are thoroughly heated. Spoon into a serving dish. Sprinkle with crumbled bacon and chopped parsley. Yield: 6 servings. |
