YAMS WITH APRICOTS | |
3 c. cooked mashed yams (2 cans) 3 tbsp. butter, melted 1/2 tsp. salt 1/8 tsp. pepper 3 tbsp. brown sugar 1/2 c. apricot juice 8 drained canned apricots, halved (1 lb. can) 16 marshmallows (1/4 lb.) Oven temperature: 425 degrees. Baking time: 20 minutes. Serves 6. Combine mashed yams with butter, salt, pepper, brown sugar and apricot juice. Blend well. Spoon into a buttered baking dish (1 quart). Cover with drained apricot halves and to with marshmallows. Bake in a hot oven until marshmallows browns. |
