VEGETABLE LOAF 
1 c. peas
1 c. cooked carrots
1 c. cut green beans
2 c. mashed potatoes
3 tbsp. butter
1 med. onion, minced
2 tbsp. flour
2 c. milk
1 tsp. salt
1/4 tsp. pepper
1 tsp. onion salt
1/2 tsp. celery salt
1 c. sharp grated cheese
1/2 c. bread crumbs

Melt butter and add flour. Add onion, milk, seasonings and cook until thick. Remove from heat and add cheese. Stir and let stand a few minutes. Mix lightly with the peas, carrots, beans. Make layers with the mashed potatoes and the vegetables in a greased baking dish. Cover with the bread crumbs. Bake 1 hour at 350 degrees. Serves 8.
